This place was great tbh. It is authentic Neapolitan. Our server was quite knowledgeable about most of the things I asked him like "the pizza was made using 67% hydration dough using 4 basic ingredients" (flour water salt yeast). Though he did not know how long it was fermented for, I'd ballpark it to be a direct dough for 24-36 hours. They strive for authenticity so many things are made the Neapolitan way. 1. Crust - Very light and airy, perfectly proofed (slightly over, which is fine). This tastes quite similar to mine, theirs had more air though due to not doing an extra pre-bake stretch. The bottom had great leoparding, with terrific air development in the crust. 2. Sauce - Thin, unsimmered crushed tomatoes so it comes out a bit wetter. Strong tomato taste, this leads to a bit of sogginess in the center of the pizza if you let it sit for a bit. This is the "real Neapolitan" sauce so it is made the Neapolitan way though that might not be preferred for some. 3. Cheese - actual buffalo mozzarella in large chunks on the Margherita! Most restaurants won't give you this. Tastes great. 4. Presentation - Perfect pizza presentation, these are on 13 inch plates, I would ballpark the pizza to be about 12.5 inches. They use an Acunto Forni pizza oven, shipped from Naples, tiled in San Francisco. They apparently drove it across the country thereafter probs to save on the insane shipping. The person who stretched and topped the pizza was very skilled, technique is slightly different than mine but because the dough was very well proofed! She could stretch it very easily to 14 inches. I'm estimating the wooden peels they use to be around 14x16 and it's stretched edge to edge. The pizzaiolo had masterful technique of managing heat, positioning, turning, and topping. I'm kinda amazed she did it all herself but it was a slow period during the day. The dough is rested in front of the pizza oven, so I would guesstimate they do 3-4 hours of 80F ish proofing before or during service. Total bake time was between 60-90 seconds depending on how heavy the toppings were. The Bianca and Patate were very good. We added calamari, asparagus, and the veal bolognese with the 3 pizzas for a party of 4toddler. The price was around 18-20 for each pizza. Conclusion: I give this place a 5/5 for Neapolitan style pizza. If you are not used to the Neapolitan sauce, you probably won't like that it becomes quite moist/soggy after a while.

I love finding places that surprise me - this was just that. Nestled away in a shopping plaza, Ema Rossi Pizzeria is serving delectable Italian food that you absolutely have to try! The menu is simple, yet exciting with plenty of options to choose from. There are also specials that may change depending on when you go. We did not try the specials. However we did try the Salsiccia pizza and Veal Bolognese. We also had the Suppli as an appetizer but I didn’t catch a picture of that. All dishes were tasty, fresh, and tasted amazing. I cannot speak to authenticity - as I’m not an Italian food connoisseur let alone seen Italy. However, this restaurant seems and feels on par with a very authentic experience. As a sweet treat we had the Tiramisu for dessert which was also amazing! I love that the coffee (used in the dish) had a bit of spices brewed with it - I could at least taste cardamom and potentially cinnamon in the coffee-dipped ladyfingers. This place feels like a place you have to go back to over and over until you try everything on the menu. I’ll definitely come back one day! Other details that may be helpful: they don’t take reservations, only walk-ins. We had about a 20 minute wait on a Friday night which, in my opinion, isn’t too bad! Service was fast and attentive.

My favorite Neapolitan style pizza I've had in the area. I liked the doneness level and the taste was great without being oily. I also really liked the cauliflower and Brussels sprouts although I would have liked a bigger portion for the price. I think overall, everything was worth the price. Service was friendly but a tad slow some of the time, as the restaurant was quite busy when we went. Will definitely be back in the future. Recommend!

I had an amazing experience dining here. The owners are using the finest ingredients and not compromising in any department despite the challenging economic times. The mussels and asparagus with romesco sauce were great. The pizza was probably the best Neapolitan pizza I ever had. The special pizza with braised lamb, goat cheese, spinach and roasted peppers left me speechless. The other special, the Americana had all my favorite toppings (mushrooms, onion, in house made mozzarella, pepperoni), and was so flavorful. The crust is the real star and you can tell the dough is made with the best flour, fermented to perfection, resulting in and incredibly airy, chewy and crispy texture. The best ingredients, perfect dough, thoughtful flavor combinations and masterful cooking in their oak fired Neapolitan oven all combine to create a magical experience. The hospitality is five star just as the food. You can tell how passionate the owners are about what they are doing. I can keep talking about how much I loved everything but you are better off going there right away to try it for yourself!

For an authentic, Italian pizzeria, I’d say that Ema Rossi Pizzeria is great if you’re craving Italian here in Rockville. I like their vegetable plates. However, as for the main dishes and desserts, I feel that at least their salmon dish could have more vegetables added to it. Plus, the salmon itself was a bit dry. Nevertheless, it was good. As for the pistachio cake, in my opinion, it could use either some strawberries and/or rose petals to make the slice stand out. That’s me looking to add more fiber to my diet. Otherwise, I’d like to come back and give the pizza a try. I’m a sucker for brick oven pizza. As for the service, it was nice and quick. All in all, my boyfriend and I enjoyed coming here. We hope to come back and try more dishes here.
